WHAT CONSTITUTES READ BREAD BY DEFINITION
The biggest problem surrounding the myth, that bread is bad for you, is the notion all bread is the same, made equal, the ingredients and baking process is the same or with very little difference. That could not be further from the truth and therein lies the problem, the misleading information that has lead to confusion among people as to whether or not bread is good or bad for you.
Real bread, that being 100% organic whole wheat grain sourdough bread is a complex carbohydrate and is highly beneficial for your health and well being.
The Real Bread Campaign is a worldwide organization based in the United Kingdom and run by the charity Sustain. Its mission is to find and share ways to make bread better for us, better for our communities and better for the planet. Their definition is "Real Bread is that made without the use of processing aids or any other artificial additives. It believes that any product made using any artificial additive should not be called bread.
Let’s put the record straight so there can be no more confusion. Real leavened bread as made by our ancestors for thousands of years was made with 3 ingredients.
1:100% freshly milled organic whole grain wheat flour. ( Today, the organic wheat kernel is kept by organic farmers and used each year for their seed. It has not been genetically modified, and no chemicals are used during the seeding, right through to the harvesting of the grain, either on the fields or on the grain. Our ancestors never used chemicals to grow their wheat
2: Filtered water.
3: Natural grey sea salt. (Celtic sea salt is the only salt to be scientifically validated to contain 84 minerals)
The sourdough starter, the leavening agent that makes the bread rise before baking, is made from flour, water, and airborne micro-organisms.
Nothing is removed from the flour, (The bran, germ, and starch remain intact)
Nothing is added, by that I mean, dough conditioners, flour improvers, processing aids, chemical leavening, or any other artificial additives.
Sometimes, you might not want a plain loaf - you might want it enriched or otherwise jazzed up a bit.
Additional ingredients are great as long as they are natural (e.g. seeds, nuts, cheese, milk, malt extract, herbs, oils, fats, and dried fruits) and themselves contain no artificial additives
